Oh Halloumi, how I love you.

I’m a late bloomer when it comes to Halloumi cheese. I must have been sleeping under a rock, because there is no other sane excuse for not trying Halloumi till 2015. And do you know what’s even better than Halloumi? Smoked Halloumi. Smoked every thing is better! Nothing beats than distinct smoky charred flavor in a dish, and this Halloumi cheese really brings it. I can’t tell you how many ways I’ve had this cheese, on bread, with pasta, as a filling and so on! Aside from this salad I particularly enjoyed the cheese with a creamy pasta sauce. It really took my homemade pasta over the top (P.s if you’d like to see some pasta recipes, do leave a comment below I’d be happy to oblige). The mix of fresh and smoky in this salad reminds me of summer barbecues. The cheese is really so perfect on its own, all I had to do was pair it with garden-fresh flavours to allow it shine. Leafy greens, crunchy veggies and tangy berries worked well to create a delightful dish, yummm so so good. I stuck with the fresh theme and dressed the salad with a light yogurt lemon herb dressing, which really pulled the flavors together wonderfully. It is great for a quick lunch or a light dinner after work because it comes together in no time at all. For a more filling meal, I suggest you pair it with some roasted sweet potatoes or some lean protein. Ingredients

2 cups spinach

1/4-cup blueberries

1/4-cup cherry tomatoes (halved)

1 cup smoked Halloumi (Cut length wise)

1/4-cup carrot (cut in thin strips)

Dressing

1 tbsp. low fat plain yogurt

1 tsp. lemon juice

1/4 tsp. cayenne pepper

1/4 tsp. dry chives

1/4 tsp. parsley

1 tsp. olive oil

Salt & Pepper

Method

Mix all the ingredients for the dressing in a small bowl and whisk together, till a creamy delicious dressing is achieved. Clean veggies and toss together. Heat a pan and cook Halloumi for a minute on each side the toss with the veggies and berries. Dress and you like and serve.
