Plantain Pancakes

Everyone loves plantain, well everyone should. If you aren’t familiar with plantains, you need to hop on ‘em real quick. They look like banana’s older brother, with a deeper color and larger frame. They are a popular side dish in Caribbean and African cuisine because of their sweet taste. Plantains are also highly nutritious and they are low in calories. In fact diabetic patients are often asked to eat green plantains. The healthiest ways to eat them include boiling, grilling or roasting. Grilled plantain is a popular street food in Nigeria called “Boli”. You can’t drive past a corner without seeing a roasting spot for these delicious treats.

What you must never do is fry these. No fried foods ever. #FitFam. Having said that let me confess that once in a while I love to indulge. Nothing beats fried plantains “Dodo” but only on cheat day. *wink

This plantain pancake recipe is the ultimate food fusion. Dodo and pancakes? Can I get an Amen?

My kitchen was filled with that unmistakable smell of plantain frying when making these. Oh God, I nearly cried. They were the perfect start to what turned out to be the perfect day. I told you, plantain has magical powers.

Ingredients

2 ripe medium plantains

½ cup gluten-free flour

1 egg

½ tsp. pinch salt

½ tsp. cayenne pepper

1 cup of milk

Coconut oil for frying

Directions

Peel the plantains and roughly chop before placing them in a blender. Add the remaining ingredient and blend till a smooth creamy batter is formed. Leave to rest for 10 minutes.

Lightly grease a frying pan with some coconut oil and ladle in the mixture. Cook for 2-3 minutes on each side. Sever hot with some fried eggs and mixed peppers. Enjoy.
