Granola Yogurt Pops

Looking for a quick breakfast you can make the night before? Try these! I find them especially perfect for hot summer mornings or you can simply snack on them during the day. It’s everything you love about breakfast in a cup; granola, yogurt and home made cherry chia jam.

*I find that these work best in a paper mold as it is easier to tear the wrap off.

Serves 4

Ingredients

  • 2 cups Greek Yogurt
  • 1 cup Homemade Granola (store bought works as well)
  • ½ cupHomemade Chia Cherry Jam (see recipe below)
  • 2 tablespoons Honey
  • *Vanilla Paste, optional

Directions

  1. Mix the granola with honey and stir well to combine, the honey will act as a glue to hold the base together. Divide this mixture evenly into 4 paper cup molds and press down firmly to set.
  2. Mix the yogurt with vanilla, and then fill evenly over each of the cups. Freeze for 15 mins till lightly set and then top with chia jam. Return to the freezer and freeze for 2 – 3 hours, till the yogurt is firmly set. I usually just do mine the night before.

To Make Chia Cherry Jam

½ cup water

1-cup cherries, pitted

1-tablespoon chia seeds

1-tablespoon honey

Bring the water to a boil and add the cherries, mash to soften till you get a jammy consistency. Add the honey and leave to thicken for 5 minutes.

Take of the heat and add the chia seed, staring well to combine. leve to set in the fridge for at least an hour.
