Pan-fried Apples & Oatmeal

I make a million variations of oatmeal, but as the weather starts to get cooler, I find it comforting to start my morning with a warm bowl of oatmeal porridge. My recipe is simple yet delicious and filling. The addition of these panfried apples definitely make this a breakfast worth sharing. The oatmeal is creamy with bite and the apples are caramelised, sweet and tangy, the perfect accompaniment. 

Serves 1
You'll need:


For The Oatmeal
1/4 cup oatmeal ( ground for quicker cooking)
3/4 cup  milk (soya, nut, dairy etc)
1 tbsp. seed ( chia, pumpkin, hemp)
1 tsp. coconut sugar
Pinch of salt

For The Apples
1 apple, halved and sliced thinly
1 tsp. coconut sugar
1 tsp. coconut oil
1 tsp. lemon juice

Directions:
In a small pan, bring the milk to boil then add the oatmeal, seeds then the coconut sugar and salt to taste. Stir to combine and and cook on low heat for another 3 to 4 minutes. 

While the oats cook, heat a small frying pan to medium high heat then add the coconut oil to completely coat the base of the pan. Add the apple slices in a single layer and cook for 2-3 minutes on each side. 

The apples should have a nice colour, and just as they start to caramelise, add the coconut sugar and toss the pan to coat evenly. Add the lemon juice and allow the sauce to reduce and thicken for another 3 minutes. 

Serve with the oatmeal.
