Happy Cinco De Mayo!
Like I need a reason to eat Mexican food? I’m all about adopting traditions that are centered on food and thanks to the Internet almost everyday is a foodie day somewhere. Today, I’m Mexican.
A staple in Mexican cuisine is corn so I thought it would be nice to do my version of the dish. In Nigeria, roasted corn “Agbado” is a popular street food, which we eat hot on its own or with “Ube” which is an African pear that almost tastes avocado. The combination is perfect.
The stars aligned somewhere in Mexico because avocado and corn is also a popular combination there. This recipe is simple, refreshing and perfect for a summer BBQ. Enjoy.

Ingredients
3 husks of sweet corn
½ cup Greek yogurt
1 tbsp. olive oil
Juice of one lime
Salt & black pepper to season
1 tbsp. chopped sweet chilies
½ tsp. garlic powder
1 avocado (chopped)
Cilantro for garnish
Method
Soak corn in cold water for one hour. While it soaks, make sauce by mixing yogurt with olive oil, salt, pepper, limejuice and garlic powder, stir till you get a smooth consistency.
Place on plate and drizzle with sauce then top with chilies, avocado and cilantro.
