Chia Seed Pudding with Plum compote

This has become my to go breakfast in the last week. It is light but filling, rich and extremely delicious. Another thing I love about this breakfast is that it requires no cooking. Yup. I simply mix the plant milk, yogurt, honey, vanilla and salt in a large bowl. Then add the chia seeds and coconut flakes and stir till the seeds have been well distributed. Breakfast its served. Joking. You need to cover that bowl and pop it in the fridge overnight, that way you will have a power packed breakfast after your morning run without lifting a finger.

Top with whatever you like. I’ve gone with some left over plum compote and fresh kiwi. If you’d like to see a recipe for that, please let me know in the comments section.

Ingredients (4 servings)

1/4 cup chia seeds

1 cup plant milk (I used soy-milk )

1 cup plain low-fat greek yogurt

2 tablespoon raw honey

1 teaspoon pure vanilla extract

1 tablespoon coconut flakes

1/8 teaspoon salt
