Healthy Club Sandwich

Hi Guys,

I hope you’re well.

I’ll keep this post short and sweet. A friend of mine Jola, requested for a recipe for a club sandwich via twitter (Follow me on @dubaifitfoodie) and I was more than happy to oblige. This recipe has all the elements of a classic club sandwich without all that grease and calories. Win win. I opted for wholegrain bread which has a hardy texture that compliments this sandwich. Low-fat yogurt or hummus work perfectly as a delicious spreads so drop that jar of mayonnaise. For protein, I decided to add some slices of roasted chicken, but I bet turkey bacon would also be a perfect fit. Vegan-fam,  don’t fret the sandwich is still delightful without meat. It is filled with a variety of fresh crunchy vegetables for flavour, texture and colour. Lightly season with fresh lemon juice, salt and pepper for a great tasting meal.

Try this and you’ll love me. It comes together in no time, its easy to pack with little or no clean up involved. All the things I love in a lunch.

Ingredients

3 slices wholegrain or rye toast

3 tbsp. ready-made hummus/ Greek yogurt

1 small avocado stoned and sliced

1 handful spinach leaves

1 large tomato, sliced

1 handful shredded purple cabbage (Toss with salt, pepper & olive oil)

1 handful slide rotisserie chicken/turkey (Vegans: Leave out)

Salt & Pepper

Lemon Juice (Optional)

 

Directions

Toast the bread and spread the Greek yogurt/hummus evenly over one side of each slice. On one slice of bread, lay half the avocado, spinach, cabbage, tomato, and chicken/turkey. Season with salt and pepper. Sprinkle with lemon juice, then cover with another slice.

Pile on the rest of the avocado, spinach, cabbage, tomato and chicken/turkey. Season again and top with the third slice.
