Granola & My First Giveaway

Hi guys,

I hope you’re all well. I’m excited to finally be hosting a giveaway. Back when I didn’t have a blog I was always fascinated by the concept of “giveaways”. Why would someone want to give way free stuff? But now I get it. You’ve got to appreciate the people who take their time to care about the things you have to say, and I do. Thank you. You smart, you loyal, I appreciate you.

Okay, let’s leave that all mushy stuff and get right into it. I’m the president of the Nigerian Cultural Club at the American University of Sharjah (AUS), and each year the University hosts an event to celebrate the cultural diversity in the campus community called Global Day. Fun Fact 1 More than 90 nationalities make up the AUS student body, its amazing really. Global Day runs for two days with an eclectic mix of national and contemporary food, dance, drama, music and other breathtaking expressions of culture. Just think a mini Global Village but with more sha-bang because for one, I’ll be dancing.

Fun Fact 2 My love for dance is right up there with my love for food. Although I’m not trained, I consider myself a dancer, I have been dancing since I was a toddler so I got some moves *Beyonce booty pop*. I can’t hear a beat and not move. It is that serious. In addition to the few dance gigs I’ve done here and there Hustler life, I have choreographed the Nigerian Club Performance at Global Day for 3 years in a row. To conceive a show and see it down to every detail is very hard work. We are talking choreography, costumes, lighting, props, makeup and the list goes on. It takes months to prepare for a 10-minute performance. As a graduating senior, this will be the last year actively participating in the Global Day *Sniff sniff*.  It has been a difficult but enlightening journey. I have learnt so much about myself, life and people in general. Trust me, nothing will teach you better life skills than managing a bunch of Africans. LOL I love you guys. On a serious note, Global Day has been one of the highlights of my university experience.

Entry through the main gate is free. There will be an outdoor show (so you will still see me dance), you can tour the different National pavilions, try the food, learn something new about the 36 participating countries and meld with over 5000 expected visitors. Trust me it’s a real treat.

Global Day

Venue: American University of Sharjah, University City, Sharjah

Date: March 19th – 20th

Time: 5:00 pm – 11:00pm

Granola, you beauty you. I love all kinds of granola, but this recipe is definitely one of my favourites because it is combination of all my best nuts and seeds. It’s the perfect mix of sweet, salty and crunchy. It is quick to make and keeps for about 3 weeks in an airtight jar but it is so delicious it won’t last that long. You will love it.

Ingredients

2 cups rolled oats

½ cup chopped almonds

½ cup chopped walnuts

¼ cup pistachio

¼ cup shredded coconut

2 tablespoons chia seed

¼ cup honey

2 tablespoons coconut oil

1 heaping tablespoon of peanut butter

¾ teaspoon salt

Directions

Preheat oven to 250 degrees F.

In a large bowl, combine the oats, nuts, chia seeds and coconut.

In a separate bowl, combine honey, oil, peanut butter and salt. Combine both mixtures and pour a large baking tray. Cook for 30 – 45 minutes stirring every 15 minutes to achieve an even color.

Remove from the oven and transfer into a large bowl. Cool completely then store in an airtight container.
